Kale and Parsnip Soup

    Here is a very healthy and tasty soup of kale and parsnips. I think it is extra good when garnished with a sprinkle of pine nuts.

    Serves: 4 

    • 1 clove garlic
    • 1 small onion, diced
    • 4 cups water
    • 2 stock cubes
    • 400g kale, stems removed and sliced
    • 2 parsnips, diced
    • 1 tablespoon mustard
    • salt and pepper, to taste
    • pine nuts, to garnish

    1. Heat a frying pan with a knob of butter or a drizzle of olive oil and fry the garlic and onion until soft.
    2. In a saucepan, boil the water with the stock cubes. Add the kale and parsnips and simmer 20 minutes until vegetables are tender.
    3. Add the garlic, onion and mustard to the soup. Puree with a hand blender until smooth and season with salt and pepper to taste.
    4. Serve, garnished with pine nuts.
