Vegetable Soup with Frankfurts

    I like to make this soup as a lunch for the kids because it is healthy but also has tasty frankfurts in it, which they love.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 teaspoon butter
    • 1 onion, finely diced
    • 1 small leek, thinly sliced
    • 300g carrots, peeled and sliced
    • 300g zucchini, diced
    • 2 cups (500ml) vegetable stock
    • 300g potatoes, peeled and diced
    • 1/2 teaspoon sea salt
    • 4 frankfurts, sliced
    • freshly ground black pepper, to taste
    • 3 sprigs fresh parsley, chopped

    1. Heat olive oil and butter in a large saucepan and saute onions until translucent.
    2. Add leeks, carrots and zucchini. Saute three minutes, stirring.
    3. Pour in vegetable stock and add potatoes and sea salt. Simmer 12 minutes.
    4. Add the frankfurts to the soup and heat through for 5 minutes. Season with pepper and serve garnished with parsley.
