Zucchini and Wine Soup

    Every year there are too many zucchini in the garden so this is a good quick way to use up some. The touch of wine really brightens it.

    Serves: 2 

    • 1-2 tablespoons olive oil
    • 1 onion, diced
    • 1 clove garlic, diced
    • 500g zucchini, diced
    • 2 cups (500ml) stock
    • 1/2 cup (125ml) white wine
    • salt, to taste
    • handful fresh basil, finely chopped

    1. Heat oil in a saucepan and fry onion until translucent. Saute garlic briefly then stir in zucchini.
    2. Add stock and white wine. Bring to a boil, reduce heat and simmer 20 minutes. Puree if you like. Season to taste and serve with fresh basil.
