Potato Soup with Beef Jerky

    This is a satisfying winter soup with potatoes, carrots and a garnish of fried beef jerky. Very warming and hearty.

    Serves: 4 

    • 4 potatoes, peeled and diced
    • 4 carrots, peeled and diced
    • 7 cups stock
    • 50g beef jerky, diced
    • salt, pepper and nutmeg, to taste

    1. Set aside a handful of potato cubes and place the rest in a saucepan. Add carrots and 6 cups stock and bring to a boil. Reduce heat and simmer 20 minutes until vegetables are soft.
    2. In the meantime, fry the jerky in a frypan. Add the reserved potatoes and saute a few minutes. Pour in the remaining cup of stock and simmer 10 minutes.
    3. Puree the soup and season with salt, pepper and nutmeg. Serve, garnished with jerky and fried potatoes.
