Strengthen your immune system with this delicious soup with carrot and fresh orange juice. It's bright and amazing.


Serves: 4 

  • 1 tablespoon butter
  • 1 onion, diced
  • 4 cups vegetable or chicken stock
  • 750g carrots, diced
  • 4 cardamom pods
  • 1 bay leaf
  • 1 stalk celery, sliced
  • juice of 1 orange
  • 2 tablespoons chopped parsley
  • salt and pepper, to taste

  1. Melt the butter in a saucepan and saute onion until translucent over medium heat.
  2. Add stock, carrots, cardamom, bay leaf and celery and simmer 20 minutes.
  3. Remove cardamom and bay leaf. Remove soup from the heat and puree with a stick blender.
  4. Stir in orange juice and parsley. Season with salt and pepper and serve immediately.
