Chilled Mango Soup

    This soup is a poem in summer either as a dessert or an elegant appetiser. I like to add a little more cayenne and chilli to make it sharper, but adjust it to your own tastes.

    Ingredients
    Serves: 6 

    • 800g mango puree
    • 1 cup milk
    • 1 cup natural yoghurt
    • 1 cup unsweetened coconut milk
    • pinch cayenne
    • 1/2 teaspoon mild chilli powder, or to taste
    • pinch salt
    • chopped fresh coriander leaves or mint leaves, to garnish

    Directions
    Preparation:5min  ›  Extra time:1hour chilling  ›  Ready in:1hour5min 

    1. Place all ingredients except the garnish in a blender or food processor and puree until smooth.
    2. Chill in the fridge until ready to serve. Garnish with fresh coriander or mint.
