Quick Zucchini Soup


    A quick zucchini soup which is ready and on the table in less that half an hour. Great to make when the garden is filling up with zucchini.

    Serves: 4 

    • butter, as needed
    • 1/2 onion, diced
    • 1 clove garlic, minced
    • 500g zucchini, diced
    • 1-2 potatoes, peeled and diced
    • 2-3 cups hot water
    • salt, pepper, sugar and nutmeg, to taste
    • stock powder, to taste
    • 100ml cream

    1. Melt a dab of butter in a saucepan and fry onions and garlic until soft. Add zucchini and potatoes.
    2. Pour in water and bring to a boil. Reduce heat and simmer 15 minutes. Season with salt, pepper, sugar and nutmeg. Add a little stock powder if necessary.
    3. Puree with a stick blender and stir in cream. Serve.
