This soup is nice and creamy even though it does not contain cream. Chicory is sometimes sold as radicchio.

1 onion, diced
5 bunches chicory, stems removed and chopped
1 leek, thinly sliced
1 celery stalk, diced
6 cups (1 1/2 litres) chicken stock
salt, pepper and nutmeg, to taste
croutons, to serve
- Melt butter in a saucepan and fry onion until soft.
- Add chicory, leek and celery. Saute, stirring, 3-5 minutes over medium heat.
- Add chicken stock and simmer, covered, 10 minutes. Puree the soup then season with salt, pepper and nutmeg. Serve with croutons.
