Chicory Soup


    This soup is nice and creamy even though it does not contain cream. Chicory is sometimes sold as radicchio.

    Serves: 4 

    • 20g butter
    • 1 onion, diced
    • 5 bunches chicory, stems removed and chopped
    • 1 leek, thinly sliced
    • 1 celery stalk, diced
    • 6 cups (1 1/2 litres) chicken stock
    • salt, pepper and nutmeg, to taste
    • croutons, to serve

    1. Melt butter in a saucepan and fry onion until soft.
    2. Add chicory, leek and celery. Saute, stirring, 3-5 minutes over medium heat.
    3. Add chicken stock and simmer, covered, 10 minutes. Puree the soup then season with salt, pepper and nutmeg. Serve with croutons.
