Stack of Pancakes

    This is a wonderful pancake recipe that allows me to create a stack of pancakes and bring them to the table so we can all eat together rather than me slaving over the stove while everyone else is munching out.

    Serves: 4 

    • 1 cup self raising flour
    • salt, to taste
    • 1/4 teaspoon bicarb soda
    • 1 tablespoons sugar
    • 1 egg
    • 1/2 cup milk
    • tablespoon melted butter

    1. In a bowl sift in the flour, salt and bicarb soda. Make a well in the centre.
    2. Add the sugar, egg, milk and melted butter. Stir until it is a smooth batter, adding more milk if too thick.
    3. Heat a non-stick frypan until a moderate heat. Spoon in the mixture to make your desired sized pancake.
    4. Cook until bubbles appear on the top, flip and cook on the other side. Add to a plate and place in a warm oven until ready to serve.
    5. Repeat the steps and cook pancakes adding to the pancake stack on the plate.
