Spinach Pesto Spaghetti

    This is a simple pesto and pasta dinner that features spinach with spaghetti noodles. Feel free to change based on available ingredients and personal taste.

    Serves: 4 

    • 2 garlic cloves, minced
    • 1 cup fresh basil
    • 2 cups fresh spinach
    • 1/2 cup (60g) toasted pine nuts
    • 1/2 cup (60g) grated parmesan cheese
    • salt and pepper, to taste
    • 1/2 cup (125ml) olive oil
    • 1 cup baby spinach, to serve
    • spaghetti for 4

    1. Blend the garlic, basil, spinach, pine nuts, parmesan cheese, salt, pepper and olive oil in a blender or food processor until smooth. Leave to infuse until spaghetti is cooked.
    2. Cook the spaghetti according to the packets instructions.
    3. Stir through enough pesto to reach the flavour intensity you prefer, stir through the baby spinach, the heat of the spaghetti will be enough to make it wilt. Serve and eat.
