Wild Garlic Soup

    Wild garlic is very good in soup. This is a great dish to make when it comes up in spring. I like to serve it with toasted croutons.

    Serves: 6 

    • 30g butter
    • 2 onion shallots, diced
    • 30g flour
    • 1 cup (250ml) warm milk
    • 3 cups (750ml) vegetable stock
    • 200g wild garlic, finely diced
    • 150g herb cream cheese (such as chives and onion)
    • freshly ground black pepper, to taste
    • nutmeg, as desired
    • bread or croutons, to serve

    1. Melt the butter in a saucepan and fry shallots until glazed. Add flour and fry, stirring, 1 minute. Gradually whisk in the warm milk and cook until thickened.
    2. Whisk in the stock, then add the wild garlic. Simmer 5 minutes.
    3. Stir in cream cheese until smooth. Season with pepper and nutmeg. Serve with bread or croutons.
