My favourite delicate fish soup with spinach, garlic and cream. It's a lovely soup for a cool afternoon lunch.


Serves: 6 

  • 1 stock cube
  • 4 cups (1 litre) boiling water
  • 5 tablespoons clarified butter
  • 400g salmon, diced
  • 1 1/2 kg fresh spinach, rinsed and chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, crushed
  • 300ml cream

Preparation:20min  ›  Cook:45min  ›  Ready in:1hour5min 

  1. Dissolve the stock cube in the water.
  2. Melt the butter in a saucepan and fry the salmon 10 minutes. Add the stock and simmer 30 minutes more.
  3. Add the spinach and cook another 5 minutes.
  4. Add salt, pepper, garlic and cream, stir and remove from heat. Serve.
