Potato, Salmon and Celery Soup

    Lovely homemade potato soup with fried salmon fillet. I like it by itself, with crusty bread or croutons.

    Serves: 4 

    • 4 cups fish stock
    • 3 potatoes, peeled and diced
    • 2 stalks celery, sliced
    • salt, to taste
    • 1/4 teaspoon peppercorns
    • 2 bay leaves
    • 2 tablespoons vegetable oil
    • 1 onion, diced
    • 300g salmon fillet

    1. Bring the stock to a simmer and add the potatoes, celery, salt, pepper and bay leaves. Simmer 10 minutes.
    2. Meanwhile, heat vegetable oil in a frypan and saute onions until soft. Add diced salmon and fry on all sides. Add to the soup and simmer another 5 minutes, until potatoes are done.
