Potato Soup with Salmon

    A delicious way to make a simple potato soup with a hint of garlic and rosemary. It is lovely garnished with smoked salmon.

    Serves: 4 

    • 1 onion, diced
    • 1 clove garlic, crushed
    • olive oil, as needed
    • 4 cups (1 litre) chicken stock
    • 2 cups (500ml) milk
    • 7 medium potatoes, peeled and diced
    • 1 sprig rosemary (leaves only)
    • salt and pepper, to taste
    • 4 slices smoked salmon, shredded

    1. Saute onion and garlic in a little olive oil in a large saucepan until onion is soft. Add the chicken stock, milk, potatoes and rosemary. Simmer 30 minutes.
    2. Puree the soup with a hand blender until smooth. Season with salt and pepper.
    3. Divide the salmon between four soup bowls and ladle the soup over.
