Apple Soup with Smoked Salmon and Cinnamon Croutons

This unusual soup takes the natural combination of smoked salmon and apples and takes it to the next level. A great special occasion dish.


Serves: 6 

  • Soup
  • 1 tablespoon butter
  • 1 onion, diced
  • 4 apples, peeled and diced
  • 3 cups (750ml) vegetable stock
  • 4 tablespoons cornflour (or less as needed)
  • 1-2 tablespoons lemon juice
  • 1 teaspoon honey
  • 3 tablespoons hot mustard
  • salt and pepper, to taste
  • Cinnamon croutons
  • 2 slices wholemeal bread, cubed
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon
  • Garnish
  • 125g smoked salmon, cut into strips
  • 1 bunch watercress

  1. Melt one tablespoon butter in a saucepan and fry the onion and apples about 5 minutes. Add vegetable stock and simmer 20 minutes. Puree soup with a hand blender.
  2. Meanwhile, heat 1 tablespoon butter in a frypan and fry the bread cubes to make croutons. Sprinkle with cinnamon.
  3. When apples have been pureed, stir in the cornflour, then add lemon juice to taste, honey and mustard. Simmer 2 minutes. Season with salt and pepper and reheat, but do not boil.
  4. Serve, garnished with smoked salmon, watercress leaves and cinnamon croutons.
