Spicy Beef and Tomato Soup with Macaroni

    Just the thing for a cool night. Nicely spiced soup with just a touch of chilli. Serve with a hot roll. Enjoy.

    Serves: 6 

    • 1 kg steak mince
    • 2 large onions, diced
    • 2 teaspoons minced garlic
    • 6 Maggi(TM) beef stock cubes
    • 6 cups water
    • 2 (400g) cans diced tomatoes
    • 1 (850ml) can tomato juice
    • 2 tablespoons tomato paste
    • 3 teaspoons Worcestershire sauce
    • 2 tablespoons brown sugar
    • 1 teaspoon dried basil
    • 1 teaspoon chilli powder
    • 4 cups cooked elbow macaroni
    • salt and pepper, to taste

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

    1. In a large pot, brown mince and drain off liquid. Return mince to pot.
    2. Add all other ingredients except for macaroni.
    3. Bring to boil then reduce heat and simmer, covered, for 15 minutes. Add macaroni and simmer another 5 minutes. Remove from heat and serve.
