Lobster Soup

    This lovely lobster soup is lightly flavoured with a pinch of curry but I find that a little cinnamon or nutmeg works well too.

    Serves: 4 

    • 500g lobster pieces with shells
    • 1 teaspoon olive oil
    • 2 cloves garlic, roughly diced
    • 1 onion, roughly diced
    • 1 carrot, roughly diced
    • 4 cups (1 litre) water
    • 3 vegetable stock cubes
    • 2 tablespoons fish sauce
    • pinch curry powder
    • 1 tablespoon olive oil
    • 2 tablespoons cornflour
    • 1 tablespoon tomato paste
    • 100ml milk
    • pinch salt

    1. Pick the lobster meat and set aside. Keep the shells.
    2. Heat 1 teaspoon olive oil in a saucepan and add the shells. Saute 10 minutes then add garlic, onion and carrot. Saute 3 more minutes. Add water, stock cubes, fish sauce and curry powder and simmer 1 hour.
    3. In a bowl, mix the tablespoon olive oil with the cornflour. Stir into the soup.
    4. When the soup has finished simmering, strain and discard the solids. Reheat the soup and simmer 5 minutes. Add milk and a pinch of salt. Finally add the lobster meat, reheat and serve.
