Charred Tomato Salsa

This is a super easy salsa. The blackened, blistered skin of the tomatoes gives it amazing flavour.

Serves: 4 

  • 4-5 medium tomatoes, cored
  • 1-2 jalapeno chillies, halved and seeds removed
  • 1 bunch fresh coriander, stems trimmed
  • 1/2 large white onion, cut into 4
  • 2 large or 3 medium to small garlic cloves
  • juice from 1/2 lime, or to taste
  • sea salt, to taste

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat grill and line a baking tray with baking paper.
  2. Place tomatoes, onion and chillies on baking sheet and place in oven.
  3. Grill, turning halfway through, until blistered, 12-15 minutes. Let cool.
  4. Transfer charred vegetables to blender or food processor.
  5. Add garlic and lime juice and pulse until a chunky puree forms.
  6. Season with salt and more lime juice, if desired. Cover and refrigerate until using.


Salsa can be made 3 days ahead.
