My Clam Chowder

If you can find baby tinned clams at the supermarket, get them! They are wonderful in this potato and corn chowder.


Serves: 2 

  • 1/4 onion, diced
  • 1 tablespoon butter
  • 2 1/4 cups milk
  • 1 tablespoon chicken stock powder
  • 2 tablespoons flour
  • 1 potato, diced
  • 1 tin (140g) clams
  • 1 cup frozen corn
  • salt and pepper, to taste
  • pinch paprika
  • shaved Parmesan, to garnish
  • fresh chives, to garnish

  1. In a medium saucepan, saute the onions in the butter for a few minutes.
  2. Add milk, stock powder and flour and mix well. Add the potato and simmer 10 minutes over low heat or until potato is tender.
  3. Add the clams with their juices and the corn. Simmer 5 minutes more.
  4. Season with salt, pepper and paprika. Serve garnished with Parmesan and chives.
