Buckwheat Soup with Chicken Meatballs

    A delicious quick and healthy soup that children love. It's quick to make the meatballs if you use a food processor.

    Serves: 4 

    • 4 cups (1 litre) chicken stock
    • 1/3 cup buckwheat
    • 2 potatoes, diced
    • 1 carrot, diced
    • salt, to taste
    • 2 bay leaves
    • 1 onion
    • 2 cloves garlic
    • 1 egg
    • 200g chicken mince
    • 1 bunch parsley, chopped

    1. Bring the chicken stock to a simmer and add the buckwheat, potatoes and carrot. Season with salt and add the bay leaves.
    2. In a food processor, combine onion, garlic and egg. Mix with the chicken mince and season with salt.
    3. Form into meatballs with a teaspoon and drop in the simmering soup. Add parsley and simmer until the buckwheat and potatoes are tender.
