Wow, what a simple soup and what a flavour! Just blend the ingredients, reheat and serve! Ginger is a fabulous addition.


Serves: 4 

  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon butter or margarine
  • 2 cups cooked lentils
  • 1 medium baked potato
  • 1 tomato, peeled and seeded
  • 1 cup water
  • 1 tablespoon minced ginger
  • pinch curry powder
  • 4 fresh basil leaves
  • 1 tablespoon salt (or to taste)
  • juice and zest of 1 lemon

  1. Brown the onion and garlic in butter.
  2. Place onion mixture and all remaining ingredients (except zest) in a blender. Puree until smooth.
  3. Transfer to a saucepan and bring to a simmer. Add lemon zest. Serve hot, drizzled with a little olive oil.
