Lentil Soup

    This is an Egyptian recipe for lentil soup, simple, delicious and filled with healthy ingredients. The perfect thing for a warming dish.

    Serves: 4 

    • 1 cup red lentils, rinsed
    • 1 potato, diced
    • 1 carrot, diced
    • 1 zucchini, diced
    • 1 onion, diced
    • 1 stalk celery, sliced
    • 1 tomato, diced
    • 3-4 cloves garlic, diced
    • salt, to taste
    • cumin, to taste
    • 2 tablespoons lemon juice
    • To garnish
    • parsley, chopped
    • creme fraiche or sour cream

    1. Place lentils, potato, carrot, zucchini, onion, celery, tomato and garlic in a saucepan, cover with water and bring to a simmer. Simmer about 15-20 minutes.
    2. When lentils and vegetables are tender, puree with a hand blender. Add more water if soup is too thick.
    3. Season with salt, cumin and lemon juice. Serve, garnished with parsley and creme fraiche.
