Lentil Soup with Beef and Potatoes

This soup has been a favourite of mine and my sister since childhood. It's a great lunch or dinner meal, full of flavour.


Serves: 8 

  • 500g beef, cut into large cubes
  • 2 tablespoons flour
  • 2 tablespoons oil
  • 1 onion, finely diced
  • 2 cloves garlic, finely diced
  • 4 carrots, diced
  • 1 stalk celery, sliced
  • 200g brown lentils
  • 1 (400g) tin diced tomatoes
  • 4 cups (1 litre) beef stock
  • 2 teaspoons rosemary
  • 300g new potatoes, skin on

  1. Dust the beef with flour. Heat oil in a large saucepan and brown the beef on all sides. Remove and set aside.
  2. To the saucepan, add the onion, garlic, carrots and celery (add more oil if necessary). Fry a few minutes, then add lentils and tomatoes plus juice and stir well.
  3. Add beef stock, rosemary and seared beef. Simmer 40 minutes. Add potatoes and simmer another 20 minutes until done.
