    Prunes add a touch of sweetness to a comforting chicken and rice soup. The soup is very simple to make but so good.

    Serves: 4 

    • 3 tablespoons butter
    • 300g skin-on chicken, diced
    • 200g leeks, sliced (white part only)
    • 4 cups (1 litre) chicken stock
    • salt and pepper, to taste
    • 2 bay leaves
    • 8 prunes
    • 1/3 cup rice

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Melt butter in a saucepan, add chicken and leeks and saute about 10 minutes.
    2. Add stock, salt, pepper and bay leaves. Simmer another 10 minutes.
    3. Add prunes and rice and simmer 15 more minutes over low heat. Serve!
