Vegetable and Rice Soup

    A good vegetable soup is very easy to make and so satisfying. Even the kids like this soup when they don't like vegetables by themselves.

    Serves: 4 

    • 4 cups (1 litre) vegetable stock
    • 1/3 cup rice
    • salt, to taste
    • 2 bay leaves
    • a few black peppercorns
    • 1 clove garlic, sliced
    • 1/2 onion, diced
    • 1 carrot, diced
    • 2 potatoes, diced
    • 250g broccoli florets
    • 1 tablespoon dried parsley

    1. Bring the stock to a simmer and add rice. Season with salt, add bay leaves, peppercorns, sliced garlic and 1/2 onion.
    2. Add carrot, potatoes and broccoli to the simmering soup. Simmer about 20 minutes over low heat or until tender. Sprinkle with parsley and serve.
