This is a delicate soup, very tasty and simple so a favourite with children and people who are feeling under the weather.


Serves: 8 

  • 2 carrots, peeled and sliced
  • 1 celery root (celeraic), peeled and diced
  • 1 leek, sliced
  • 1 stalk celery, sliced
  • 8 cups (2 litres) water
  • 2 vegetable stock cubes
  • 1/2 cup rice
  • salt and pepper, to taste
  • Maggi(TM) liquid seasoning (optional)
  • fresh parsley, chopped, to garnish

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Place the vegetables, water and stock cubes in a saucepan. Bring to a simmer.
  2. In a separate saucepan cook rice. Drain and add to soup.
  3. Season with salt, pepper and liquid seasoning (optional). Serve garnished with parsley.
