    This is a great soup to make when you need to use up some of the vegetables in the fridge. It also freezes well which is good because it makes a big batch.

    Ingredients
    Serves: 8 

    • 3 tablespoons olive oil
    • 1 onion, diced
    • 1 shallot, diced
    • 150g eggplant, diced
    • 3 large carrots, diced
    • 1 bay leaf
    • 1/4 teaspoon thyme
    • 1/4 teaspoon dried rosemary
    • 1/4 teaspoon oregano
    • 1/2 teaspoon curry powder
    • 6 cups water
    • 250g potatoes, diced
    • 2 large tomatoes, diced
    • 2 cloves garlic, minced
    • 100g leeks, diced
    • 1 teaspoon salt
    • 1/2 teaspoon pepper

    Directions
    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Heat the oil in a large saucepan and fry the onion 2-3 minutes. Add shallot and saute until browning.
    2. Add eggplant and cook 2-3 minutes. Add carrots and cook 2 more minutes.
    3. Add spices and cook 1 minute. Add water, potatoes, tomatoes, garlic and leek. Simmer 30 minutes.
    4. Puree soup in a blender and adjust seasoning to taste.
