This colourful red lentil soup contains a mix of curry spices and sweet potatoes so it is rather thick and a meal in itself.


Serves: 4 

  • 1 tablespoon oil
  • 1 onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • pinch cayenne
  • 3 cups water
  • 1 tin (400g) diced tomatoes
  • 1 clove garlic, minced
  • 1 tablespoon ginger, grated
  • 1 1/2 cups red lentils
  • 2 sweet potatoes or kumara, peeled and diced
  • 1 teaspoon salt
  • 2 tablespoons fresh coriander, chopped

  1. In a saucepan, heat the oil and saute the onion until soft. Add cumin, turmeric, curry powder and cayenne. Saute until fragrant, about 2 minutes.
  2. Add 3 cups water, tomatoes, garlic and ginger. Simmer 5 minutes. Add lentils and simmer 15 minutes or until tender. Add water if needed.
  3. Add the sweet potatoes and simmer 20 minutes until soft. Season with salt and serve sprinkled with fresh coriander.
