Simple Beetroot Soup

I like to have a little texture in a soup, so I do not puree all the beetroot, keeping about a 1/3 back until the end.


Serves: 4 

  • 600g beetroot
  • 2 onions, finely diced
  • 30g butter
  • 3 cups (750ml) beef stock
  • salt and pepper, to taste
  • 1 teaspoon sugar
  • 2 tablespoons lemon juice
  • 1 bunch fresh dill, finely chopped
  • creme fraiche, to serve

  1. Wash the beetroot and place in a saucepan of water. Bring to the boil, reduce heat and simmer 30-40 minutes until soft. Rinse and peel.
  2. Heat butter in a saucepan and saute the onion until transparent. Dice 2/3 of the beetroot and add to the onions. Pour in stock and simmer a few minutes.
  3. Puree the soup with a stick blender and season with salt, pepper, sugar and lemon juice.
  4. Dice remaining beetroot and add to the soup. Reheat soup, stir in dill and serve, garnished with creme fraiche.
