In asparagus season this soup is perfection. So simple, just simmered and then blended. Delicious and full of vitamins.


Serves: 6 

  • 100g butter
  • 1 onion, diced
  • 600g asparagus, cut into 1cm slices
  • 2 tablespoons flour
  • 6 cups (1 1/2 litres) chicken stock
  • 100ml cream
  • salt and pepper, to taste

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Melt the butter in a saucepan. Saute onion over low heat. Add asparagus and saute 5 minutes.
  2. Sprinkle in the flour, stir well and continue sauteing. Add chicken stock, stir well and simmer over low heat for 25 minutes.
  3. Blend with cream and add salt and pepper to taste. You can reserve a few of the asparagus tips to garnish the soup.
