The simplest asparagus soup for real asparagus lovers. You can also puree the asparagus instead of adding it in chunks, your choice.

- 500g asparagus
- 40g butter
- 20g flour
- salt and sugar, to taste
- chives and parsley, to garnish

- Wash and peel asparagus, smash lightly and place in a large pot of simmering water. Cook 15-20 minutes.
- Melt butter in a saucepan and stir in flour. Saute a few minutes, then gradually stir in 4 cups of the asparagus cooking water.
- Cut the cooked asparagus into bite sized pieces and add to the soup. Season with sugar and salt. Serve garnished with chives or parsley.
