The simplest asparagus soup for real asparagus lovers. You can also puree the asparagus instead of adding it in chunks, your choice.


Serves: 6 

  • 500g asparagus
  • 40g butter
  • 20g flour
  • salt and sugar, to taste
  • chives and parsley, to garnish

  1. Wash and peel asparagus, smash lightly and place in a large pot of simmering water. Cook 15-20 minutes.
  2. Melt butter in a saucepan and stir in flour. Saute a few minutes, then gradually stir in 4 cups of the asparagus cooking water.
  3. Cut the cooked asparagus into bite sized pieces and add to the soup. Season with sugar and salt. Serve garnished with chives or parsley.
