The nice thing about prawns is they cook so quickly and don't need a complex recipe to be really special. A perfect midweek meal for two.


Serves: 2 

  • 180g dried pasta
  • 2 teaspoons olive oil
  • 2 cloves garlic, sliced
  • 1/4 cup white wine
  • 2 tablespoons sour cream
  • juice of 1/2 lemon
  • salt and pepper, to taste
  • 200g peeled prawns
  • chopped fresh parsley, to garnish

  1. Boil the pasta in plenty of salted water.
  2. Meanwhile, heat olive oil in a frypan and add garlic. Fry 2 minutes.
  3. Add wine and simmer 1 minute, then lower heat and add the sour cream and lemon juice. Season with salt and pepper. Bring to a simmer, add prawns and cook until prawns are just pink. Do not overcook!
  4. Drain the pasta and mix well with the sauce. Serve, garnished with plenty of fresh parsley.
