Smoked Pork Soup

    Now this is a hearty soup! Smoked pork ribs are simmered until tender with spices and served with smoked sausage and hard boiled eggs. A real winter feast!

    Serves: 6 

    • 700g smoked pork loin ribs
    • 2 bay leaves
    • 2 allspice berries
    • 4 dried mushrooms
    • 1 onion, diced
    • 5 cloves garlic, diced
    • 6 cups water
    • 2 smoked sausages, sliced
    • 1 cup sourdough bread, cubed
    • salt and pepper, to taste
    • marjoram, to taste
    • 3 hard boiled eggs
    • fresh horseradish

    1. Place the smoked ribs in a saucepan with the bay leaves, allspice, dried mushrooms, onion and garlic. Cover with 6 cups water and simmer 1 hour.
    2. Remove the ribs, pick the meat from the bones and return to the soup. Discard bones. Add the smoked sausage and sourdough then simmer 5 more minutes. Season with salt, pepper and marjoram.
    3. Peel and halve the eggs. Grate some fresh horseradish into each bowl, top with soup and eggs.
