Cream of Zucchini Soup with Sausage

    Tender zucchini simmered in evaporated milk for a rich yet delicate soup, finished with fried sausage for a hearty meal.

    • 4 zucchini, sliced
    • 1/4 onion, diced
    • 1/4 cup water
    • salt, to taste
    • 2 (375ml) tins evaporated milk
    • 2 teaspoons chicken stock powder
    • 2-3 sausages, sliced
    • 2 tablespoons butter

    1. Place zucchini and onion in a saucepan with 1/4 cup water and salt to taste. Cover and simmer until tender.
    2. Add the evaporated milk and stock powder and blend with a stick blender.
    3. Fry the sausages in butter over medium heat. Add to the zucchini soup and simmer 10-15 minutes.
