Tomato Soup with Sausage

    A lovely summer soup with tomatoes and thyme for flavour and a bit of colour. With pasta and sausages it's a full meal.

    Serves: 6 

    • 4 pork sausages, sliced
    • olive oil, for frying
    • 1 onion, diced
    • 2 cloves garlic, diced
    • 10 tomatoes, diced
    • 1 stalk celery, sliced
    • 1 pinch saffron
    • 1 clove
    • 2 bay leaves
    • 12 sprigs thyme
    • 4 cups (1 litre) water
    • 1 small bunch angel hair pasta
    • salt and pepper, to taste

    1. Fry the sausages in olive oil in a saucepan and set aside.
    2. To the saucepan, add onion and garlic and fry. Add tomatoes, celery, saffron, clove, bay leaves and 6 sprigs thyme. Stir well and add water. Season to taste.
    3. Simmer 20 minutes uncovered then remove clove, thyme and bay leaves. Blend the soup with a stick blender.
    4. Place the soup on low and add sausages and pasta. Simmer until pasta is done, about 5 minutes.
    5. Serve the soup drizzled with a little olive oil and each bowl garnished with a thyme sprig.
