Cabbage and Sausage Soup

    This cabbage soup with smoked pork sausage is typical Portuguese cuisine, very simple to make and sure to be a hit.

    Serves: 2 

    • 3 cloves garlic, crushed
    • 1 tablespoon olive oil
    • 2 medium potatoes, peeled and diced
    • 2 cups water
    • 1 teaspoon salt
    • 2 cups cabbage, thinly sliced
    • 60g smoked pork sausage, thinly sliced

    1. Brown the crushed garlic in olive oil in a saucepan. Add the potatoes, water and salt. Simmer until potatoes are soft, then mash in the soup.
    2. Add the cabbage and sausage and simmer 10 minutes. Serve hot.
