Beef Meatball Soup

    A hearty soup which the children love. Instead of potatoes, you can add rice or pasta shapes as you prefer.

    Serves: 6 

    • 300g beef mince
    • 1 onion, grated
    • 2 cloves garlic, minced
    • salt and pepper, to taste
    • 2 1/2 litres water
    • 1 carrot, diced
    • 3 potatoes, peeled and cubed
    • 2 bay leaves
    • dried parsley, to taste

    1. In a bowl, combine mince, onion, garlic, salt and pepper. Mix well and form into meatballs.
    2. Bring the water to a boil, add the meatballs and cook. When meatballs are done, remove with a slotted spoon and skim any foam.
    3. Add the carrot and potatoes to the stock. Add bay leaves and parsley to taste. Season with salt. Simmer 20 minutes, until potatoes are done. Add meatballs and serve.
