    When you have a lot of people to feed in a hurry, try this quick meatball soup. You can use any kind of mince you have at hand, beef, chicken or pork.

    Serves: 8 

    • 400g mince (beef, chicken or pork)
    • 1 teaspoon salt, or to taste
    • pinch seasoning for meat or poultry
    • 8 cups (2 litres) water
    • 1 onion, diced
    • vegetable oil, for frying
    • 2 carrots, grated
    • 2 potatoes, peeled and diced
    • 1 cup mixed frozen vegetables (peas, corn, etc)
    • salt and pepper, to taste
    • fresh dill or parsley

    1. In a bowl, combine mince, salt and seasoning and knead well. Form small meatballs.
    2. In a saucepan, bring water to a boil. Meanwhile, fry onions in a little vegetable oil. Add grated carrot and cook 5 minutes, stirring.
    3. Add meatballs to the water. Skim any foam as it boils.
    4. Add potatoes and frozen vegetables. Simmer 10 minutes. Add onions and carrots and season with salt and pepper. Simmer another 5-10 minutes and serve, garnish with fresh dill or parsley.
