Meatball Soup with Kale and Risoni

    Risoni (orzo) is one of my favourite pastas and it is great as a side dish, in salads and in soups like this hearty meatball dish with kale.

    Serves: 2 

    • 350g beef mince
    • 1 sprig parsley, chopped
    • 1 large clove garlic, minced
    • 1 tablespoon Parmesan
    • salt and pepper, to taste
    • 2 tablespoons olive oil
    • 1 onion, diced
    • 1 carrot, diced
    • 1/2 teaspoon chilli flakes
    • 5 cups water
    • 1 chicken stock cube
    • 170g risoni pasta
    • 75g kale, ribs removed, sliced
    • Parmesan, to serve

    1. In a bowl, combine mince, parsley, garlic, 1 tablespoon Parmesan, salt and pepper. Mix well and form into small balls.
    2. Heat 1 tablespoon oil and fry the meatballs 5 minutes until browned. Set aside.
    3. Heat remaining oil in a saucepan and fry onion and carrot 5 minutes until soft. Add salt, pepper and chilli flakes.
    4. Add water and stock cube. Bring to a simmer, then add the meatballs and risoni pasta. Cook 8 minutes.
    5. Add kale and cook 2 more minutes. Season if necessary. Serve, sprinkled with grated Parmesan.
