Leftover Cereal Biscuits

    Cupboard full of out of fashion cereal? Here's a quick recipe. Can substitute muesli for any cereal similar.

    Serves: 6 

    • 125g butter
    • 3/4 cup sugar
    • 1 tablespoon milk
    • 1 egg
    • 1 teaspoon vanilla essence
    • 1 cup flour
    • 1/2 teaspoon baking powder
    • 1 teaspoon cinnamon
    • pinch salt
    • 2 cups natural muesli

    1. Heat oven to 170 degrees C, fan forced. In a large bowl, combine butter and sugar then beat until pale and creamy. Beat in milk, egg and vanilla.
    2. Stir in flour, baking powder, cinnamon and salt, mixing well. Gradually stir in muesli until combined.
    3. Drop tablespoonfuls of mixture onto baking trays lined with nonstick baking paper, allowing space for biscuits to spread during cooking.
    4. Bake for 12 to 15 minutes until lightly browned. Cool for one minute before removing from trays. Store biscuits in an airtight container.


    I have used sultana bran for a difference, toasted muesli, and I usually add some dried fruit if we have any like raisins, sultanas, apricots.
