Bacon and Fish Chowder

    You can use any kind of whitefish you like in this simple chowder. Try whiting, flathead, basa or blue grenadier.

    Serves: 4 

    • 6 thick rashers smoked bacon, diced
    • 1 large onion, diced
    • 2 stalks celery, diced
    • 1 large carrot, diced
    • 4 cups (1 litre) fish stock
    • 1 large potato, diced
    • 250g cream cheese
    • 2 cups (500ml) milk
    • 500g whitefish fillets, cubed
    • salt and pepper, to taste
    • chives, to garnish

    1. Fry the bacon in a frypan until crisp then add onion, celery and carrot and fry until soft, about 10 minutes.
    2. Place the fried vegetables in a saucepan with the stock and potato. Simmer until potato is soft.
    3. Add cream cheese, milk and fish. Simmer about five minutes. Season with salt and pepper and garnish with chives.
