Bacon Dumpling Soup

    I love hot soup with dumplings and this is my favourite since the dumplings are made with bacon! Very easy to make and tastes fantastic.

    Ingredients
    Serves: 4 

    • 250g day old bread, finely diced
    • 3 eggs
    • 1 cup milk
    • 100g bacon, finely diced
    • 1 onion, finely diced
    • 1 bunch Continental parsley, chopped
    • about 6 tablespoons plain flour
    • salt and freshly ground pepper, to taste
    • nutmeg, to taste
    • 6 cups (1 1/2 litres) strong beef stock
    • chives, to garnish

    1. Place bread in a mixing bowl. Whisk together the eggs and milk, pour over the bread and let soak 20 minutes, stirring occasionally.
    2. In a saucepan, fry the bacon, onion and half the parsley together for 2 minutes. Add to the bread mixture with the flour, remaining parsley, salt, pepper and nutmeg.
    3. Bring the beef stock to a boil. With moistened hands, for 10-12 small dumplings, place in the stock and simmer 15 minutes.
    4. Serve, garnished with chives.
