Kale and Pork Sausage Soup

    Kale is simmered in a thick potato soup and topped with sliced pork sausage. The perfect hearty soup.

    Serves: 6 

    • 1 tablespoon stock powder
    • 6 cups (1 1/2 litres) boiling water
    • 5-6 medium potatoes, peeled and halved
    • 1 bunch kale, thinly sliced
    • 1-2 pork sausages, sliced
    • 2 tablespoons olive oil
    • extra olive oil, to garnish

    1. Dissolve the stock in the boiling water. Add the potatoes, cover and simmer over low heat 20 minutes or until tender.
    2. Remove from the heat and puree the soup in a blender. Return to the heat. When it boils, add the kale and lower the heat.
    3. In a frypan, saute the sausage slices in olive oil. Add to the soup. Serve, drizzled with olive oil.
