Here's a simple bean soup with turkey mince. It is very nice served with sour cream and fresh herbs like coriander. If you add some heat it is like a chilli.


Serves: 4 

  • 1 onion, diced
  • vegetable oil, for frying
  • 300g turkey mince
  • 1 carrot, grated
  • 2 tomatoes, diced
  • 1-2 tablespoons tomato paste
  • 2 tins kidney beans
  • 4 cups (1 litre) stock
  • salt and pepper, to taste

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Fry the onion in vegetable oil until transparent. Add the mince and fry until browned, breaking up with a spatula.
  2. Separately, saute the carrots, tomatoes and tomato paste.
  3. Heat up 1 litre stock or water in a saucepan and add the mince, tomato mixture and 1 tin beans. Season with salt and pepper.
  4. Puree the second tin of beans and add to the soup. The soup will thicken. Simmer 15 minutes.
