Borscht is a delicious Russian soup which is a bright red colour due to the beetroot. This version has beef in it for a hearty meal.

Serves: 4 

  • vegetable oil
  • 500g beef, cubed
  • 6 cups water
  • 1 clove garlic, minced
  • 1 onion, diced
  • 2 carrots, diced
  • 3 potatoes, peeled and diced
  • 2 beetroot, peeled and diced
  • 1/2 head cabbage, shredded
  • 4 tomatoes, diced
  • salt and freshly ground black pepper, to taste
  • 1 bunch parsley, chopped
  • 1 cup sour cream

Preparation:20min  ›  Cook:1hour40min  ›  Ready in:2hours 

  1. Heat vegetable oil in a large saucepan and brown the beef. Add water, reduce heat and simmer gently 1 hour.
  2. Add vegetables and simmer another 40 minutes.
  3. Remove beef, roughly puree the soup and return beef to the pan. Season to taste and serve with chopped parsley and sour cream.
