Chocolate Pancakes with Strawberry Sauce

    Chocolate and strawberries go together so well so it only makes sense that they will work in this pancake recipe.

    Serves: 4 

    • Strawberry Sauce
    • 500 g strawberries
    • 2 tablespoons sugar
    • Pancakes
    • 200g flour
    • 4 teaspoons baking powder
    • 2 tablespoons cocoa powder, unsweetened
    • 1/4 teaspoon salt
    • 1 1/2 tablespoons sugar
    • 300ml of milk
    • 1 egg
    • 50g melted butter
    • butter for frying

    1. Strawberry Sauce: Cut 400g of the strawberries into thin slices, place in a medium bowl, sprinkle with sugar and let stand 10 minutes. Cut the remaining strawberries into quarters and set aside.
    2. Mash the sugared strawberries with a fork until they are a chunky sauce.
    3. Pancakes: Combine the flour, baking powder and cocoa powder in a large bowl. Add salt and sugar then mix well.
    4. Add the milk, egg and melted butter into the bowl then stir with a whisk until smooth.
    5. Heat a slice of butter in a nonstick frypan over medium-high heat, when it is frothy brown pour 1/8 of the batter for each pancake.
    6. When you see that the edges of the pancake are dry, turn over and cook for about 2 more minutes.
    7. Serve two pancakes per person on a plate, sprinkle with strawberry sauce and garnish with fresh strawberries.
