A good lobster bisque tastes spectacular and is very simple to make, the only work is picking the lobster meat.


Serves: 4 

  • 4 cups water
  • 1 medium lobster
  • 60g butter
  • 60g diced onion
  • 60g diced carrot
  • 60g diced celery
  • 1 clove garlic, crushed
  • 90g plain flour
  • 90ml good white wine
  • 60g tomato passata
  • 4 cups fish stock
  • 120ml cream
  • 2 teaspoons paprika
  • salt and pepper, to taste

  1. Bring 4 cups water to a boil with a little salt. Add lobster and boil 5 minutes. Remove the lobster and shuck the lobster meat. Set aside. Return the cleaned shell to the water.
  2. Add the butter, onion, carrot, celery and garlic. Simmer 10 minutes.
  3. Dissolve the flour in the wine and add to the saucepan. Add the tomato passata and fish stock. Season with salt and pepper and simmer 45 minutes.
  4. Strain the stock and discard the solids. Add the cream, paprika and lobster meat and serve.
