Warming Goulash Soup

    A lovely warming soup with beef or pork, capsicum and potatoes. It's a great soup for colder weather that will keep you going!

    Serves: 6 

    • oil, for frying
    • 500g pork or beef, cubed
    • 1 tablespoon paprika
    • 2 onions, diced
    • 1 small red capsicum, diced
    • 1 carrot, sliced
    • 1 parsnip, diced
    • 6-8 cups water
    • 1 bay leaf
    • 2 allspice berries
    • 1/2 teaspoon cumin
    • 1 teaspoon cayenne pepper
    • salt and pepper, to taste
    • 3-4 potatoes, diced
    • 2 tablespoons tomato paste

    1. Heat oil in a saucepan and fry meat until well browned. Remove from heat and stir in the paprika.
    2. Fry the onions in a separate pan and add to the browned meat. Add the capsicum, carrot and parsnip to the meat, cover and simmer 10 minutes.
    3. Add the water to cover the ingredients. Add bay leaf, allspice, cumin and cayenne and season with salt and pepper. Simmer 20 minutes.
    4. Add potatoes and tomato paste. Season to taste. Simmer until potatoes are done, about 20 minutes.
