I recently ran out of normal flour and my kids really wanted pancakes. All I had was wholemeal, after a bit of experimenting I created these pancakes, tasted great and are healthy.
Combine the flour, baking powder, baking soda and salt in a bowl then set aside.
In a separate bowl combine the buttermilk, sugar, oil and egg. With a spatula mix the wet ingredients into the dry ingredients. Let pancake batter rest for about 30 minutes.
Heat oil in a heavy frypan over medium heat. Pour about 3 tablespoons of batter into the frypan and fry until the batter begins to bubble (about 1 1/2 minutes). Turn pancakes and cook on the second side until it is also golden brown.
